Leftover Special: Avocado, Grapefruit & Turkey Salad

Are you all still walking around in your fat pants today? I completely overdid it on the holiday trimmings last night at the in-laws and couldn't wait to come home and rip my pants off so I could breathe again. Today we will be putting up our Christmas decorations, and I foresee nothing but spandex bottoms in my future. Or, at least until the weekend is up and I feel like I've digested all of that Thanksgiving goodness. I'd say the weekend after Thanksgiving is my favorite, because all of those leftovers means I can skip out on making dinner while the family digs into the remainder of the big meal. We love to create new dishes out of the traditional leftovers, and since I am desperately in need of a few lighter meals since I can't fit into my jeans right now, I thought we'd put this Avocado, Grapefruit and Turkey Salad recipe from Golden Blossom Honey on the menu for this weekend. 


Avocado, Grapefruit & Turkey Salad

This salad is a great way to use up those leftover turkey bits and breathe new life into any leftover lettuce. I like the addition of the Asian inspired dressing, which gives it a tangy zip of flavor without adding in a lot of extra fat into the dish. After such a big holiday meal, this salad is the perfect dish to help you get back on track before the next big holiday rolls around and you have to break out the spandex once again.

Ingredients:
 
Dressing:
1/2 cup rice vinegar
1/3 cup GOLDEN BLOSSOM RAW HONEY
1 tablespoon soy sauce
1 teaspoon grated fresh ginger
1 tablespoon sesame oil
salt to taste
Salad:
1 large head red leaf lettuce, torn into bite size pieces
1 avocado, peeled and cut into bite size pieces
1 pink grapefruit, peeled and sectioned
2 cups cooked turkey or chicken, cubed
1/4 cup pine nuts, toasted

Turkey Tostadas for Cinco de Mayo

What's better than Taco Tuesday? Normally the answer would be nothing, but for the next week the answer would be Cinco de Mayo Friday. I don't know about your family, but in mine, it's a holiday that's not to be missed. So much so that we had my sister-in-law postpone her trip to Florida by a week just so she could celebrate with us (and cook up our tacos. love you Laurie ♥) We definitely throw down when it comes to Mexican cuisine, making sure we have a huge assortment of dishes on the table for everyone to enjoy. In addition to tacos, my girls are HUGE fans of tostadas. If I serve them up once a week in our house, I'm sure there wouldn't be any complaints. What I love about tostadas is how you can customize each one for your own specific taste, and there are so many options on how to make them unique each and every time. So, when I saw Golden Blossom Honey's version of a tasty tostada, I knew we had to give these Turkey Tostadas a try. 

Turkey Tostadas

These are perfect for Cinco de Mayo or any day of the week. I think we should start a petition to have Taco Tuesday changed to Tostada Tuesday. If you aren't a fan of turkey, you can easily substitute it for chicken, black beans, jackfruit, or shredded seitan. See, I told you tostadas are super versatile!

 

Ingredients
2 (14.5 ounce) cans diced tomatoes
1 medium onion, thinly sliced
1-2 tablespoons canned chopped jalapeno peppers (according to taste)
2 tablespoons GOLDEN BLOSSOM HONEY
4 cups cooked turkey, shredded
Avocado Sauce:
1 avocado
1/3 cup prepared salsa
2 tablespoons sour cream
2 tablespoons fresh cilantro, chopped

8 tostadas
4 cups romaine lettuce, thinly sliced
8 tablespoons cotija (Mexican cheese), crumbled or Monterey Jack cheese, shredded

Gobble Up Turkey Salad with Walnuts and Grapes

Since I wasn't hosting Thanksgiving at our house this year, I went out and bought a small turkey breast for the family to enjoy earlier this week. I knew that after the big meal on Thursday, then doing some power shopping on Friday, I was not going to want to spend a lot of time in the kitchen this weekend. I bought enough so there would be plenty for leftovers, which we've been putting to good use already. Jason took the cranberry turkey sandwich I made earlier this week to lunch, and dinner tonight will be Turkey Salad with Walnuts and Grapes since I found that scrumptious recipe on Golden Blossom Honey and it looked too good to pass up. 



Since Jason has been on a diet, I did end up using fat free mayo and sour cream to try to keep this dish on the healthier side, so I like that I could switch it up to fit our needs without compromising too much on flavor. This salad can be eaten as a stand alone dish, or use it as a spread on some crusty french bread or rolls for lunch or a light dinner.  

Ingredients
4 cups cooked turkey, cubed
2 cups red seedless grapes
1 1/4 cups walnuts, coarsely chopped
1/2 cup mayonnaise
1/4 cup sour cream
2 Tablespoons GOLDEN BLOSSOM RAW HONEY
1 teaspoon poppy seeds
pepper to taste
radicchio or other lettuce leaves

Thanksgiving Leftovers? Put Them to Good Use in a Turkey Cranberry Melt!

I can't say that I'm sad that I won't be hosting Thanksgiving dinner this year. We usually go to the in-laws, then we host a Christmas breakfast at our home. I am sad that we won't be getting any of the leftovers that usually come with hosting a big meal though. Sometimes I think that the casseroles and sandwiches you can make out of the leftovers rival the main holiday meal!



Eating all of that turkey can get boring after a bit, but if you can whip up a great sauce, then you can pump new life into holiday leftovers. I usually have lots of cranberries left over, and if you have a few staples on hand, you can make an awesome cranberry relish to top off a turkey melt sandwich.



The sauce adds an awesome zingy flare to turkey, and overall, this is a pretty healthy lunch option for the day after Thanksgiving.

Cranberry Turkey Swiss Melt

INGREDIENTS:

  • Leftover Turkey (enough for 1 sandwich)
  • 1 Slice Swiss Cheese
  • Bun
  • 6 ounces cranberries (fresh or frozen)
  • 1/4 cup orange juice
  • 1 tbp brown sugar

INSTRUCTIONS:

  1. Place Swiss slice on the bottom half of bun. Warm in oven at 350 degrees until bun is toasty and cheese is melted.
  2. In a small saucepan, combine cranberries, orange juice, and brown sugar. Heat over medium-low heat for about 15 minutes, until all orange juice is soaked up. Cranberries will pop during the cooking process, but that's okay. That's what they are supposed to do.
  3. While making the cranberry dressing, heat turkey in a 350 degree oven until warm.
  4. Place turkey on the Swiss cheese, top with cranberry dressing, and garnish with lettuce if desired. Eat!
