Grilled Chicken Sandwiches with Fresh Peach Relish

Disclosure- I received the mentioned product courtesy of the sponsor for the the purpose of this review. All opinions are genuine, based on my experience with the product, and have not been influenced by promotional items.

The closer we inch towards June, the more excited I become for my favorite fruits to come into season. I love how you can use them in everything, from appetizers all the way through to dessert, so naturally we always have a fridge full of a variety of fruits in the house from May through September. I've been craving peach smoothies a lot these past few weeks, so I bought an abundance. The problem I ran into though, is I grew tired of peach smoothies, yet still had a few to use up before they were beyond saving. I thought about making peach muffins, but now that Jason's home full time for the summer, I decided I'd use my extras in this Grilled Chicken Sandwiches with Fresh Peach Relish recipe from Golden Blossom Honey for him for lunch this week.

Now that we're about to kick off grilling season, this recipe is the perfect one to keep in your arsenal of summertime lunch and dinner ideas. It has a great mix of savory and sweet, with a bit of a peppery bite added in, and it is so simple to prepare, this could quickly become a summertime favorite recipe you'll turn to time and again for the next several months. My daughter is in her sandwich era, pretty much eating sandwiches daily lately. A self described Dash-Whore, if the girl could have Chick-Fil-A Door Dashed daily, I'm pretty sure she would. Alas, she's learning that adulting is a scam and is quite expensive, especially when you're a broke college girl on a budget. Now she has to find alternative chicken sandwich options that she can make at home, and save those restaurant options for special treats when she wants to splurge on herself. Since she's not keen on using the grill at home, the chicken in this recipe can be put in the broiler, so she can make this all on her own anytime the chicken sandwich craving hits. It's so much cheaper and healthier than those fast food chicken sandwiches, and is gourmet enough to pass as restaurant quality, and that makes makes this whole recipe just peachy in my book.

Moroccan Style Caponata Sandwich

Disclosure- I received the mentioned product courtesy of the sponsor for the purpose of this review. All opinions are genuine, based on my experience with the product, and have not been influenced by promotional items.

We've just left bbq season and are transitioning into party season. I live minutes from Notre Dame University, so if the increased traffic doesn't tell us it's football season around here, the tailgating definitely does. We don't usually hit the campus for the tailgating parties, but we've been known to host a few at home viewing parties for those who want to be close to the stadium but want to avoid the crowds. For the eats, we'll stick with the basics- sliders, hot wings, hot dogs, and burgers. Sometimes we'll throw in some sandwiches for good measure. As I was browsing Golden Blossom Honey earlier this week, I saw this recipe for Moroccan  Style Caponata Sandwiches and thought they would be a fun addition to the football feast.

So much of football viewing eats are centered around either fried foods or meats, there aren't usually many vegetarian or healthy options for those who have dietary restrictions or are simply trying not to fall into the unhealthy eating habits that usually come with game day parties and tailgating. This sandwich has a lot of delicious veggies and spices piled onto toasted Italian bread, making it a perfect Mediterranean inspired sandwich worthy to be served as game day grub. No matter who you're rooting for, win or lose, with this sandwich on the menu, everyone comes out a winner!

Ingredients

1 tablespoon olive oil

1 tablespoon paprika

1/2 teaspoon ground cumin

1/4 teaspoon allspice

1/4 teaspoon cinnamon

1 (1 pound) eggplant, cut into 1-inch cubes

1 yellow bell pepper, cut into 1/2-inch cubes

1 red bell pepper, cut into 1/2-inch cubes

1 medium onion, coarsely chopped

3 medium garlic cloves, chopped

1 cup water

3 tablespoons lemon juice

3 tablespoons GOLDEN BLOSSOM HONEY

1 medium zucchini, cut into 1/2-inch cubes

1 loaf Italian bread

1/2 cup feta cheese, crumbled

1/3 cup fresh basil leaves

Open Faced Tuna Melts

Disclosure- I received the mentioned product courtesy of the sponsor for the purpose of this review. All opinions are genuine, based on my experience with the product, and have not been influenced by promotional items.

Normally I like to share a recipe that coincides with whatever season we're in, but it's been a bit wonky here these last few weeks. We dipped into the 60's last week, this week we were back into the upper 80's and it looks like more of the same heat next week. You know how excited us Midwesterner folk get when we have a stretch of days where the temps don't hit 70 degrees, so I was pretty ready to declare it crock pot and soup season last week. Alas, that hope was short lived and left me scrambling to swap out my recipe share with you today. Since I wasn't going for a seasonal or a holiday share, I thought I'd look for a seafood creation instead. Allison has been dying for me to remake Golden Blossom Honey's Smoked Salmon Rolls that we shared here last spring, but we did have some tuna in the cabinet to use up, so I opted to make her and Jason some Open Faced Tuna Melts instead.

Fennel isn't something that I have ever used or probably eaten in its natural form before, aside from fennel seeds, so even though I wasn't personally going to eat the tuna melts, I did have a great time learning how to use it from an extensive YouTube search as well as from this recipe. I love that even in my oldish age, I am still learning about new ways to use produce. The melts were so easy to prepare, even while learning how to chop up the fennel, and was ready to hit the table in just a few short minutes. You know those are the kind of recipes that I live for! While these are great for eating at home, I think you could add a second slice of bread to the top and instead of a melt, you have a sandwich that's perfect to take for school or work lunch as well. If you're not into seafood, chicken would make a good substitute here because it would blend just as well with the rest of the ingredients.

Ingredients

2 (6 ounce) cans solid white tuna, drained

1/3 cup mayonnaise

2/3 cup fennel, finely chopped

5 black olives (Gaeta or Kalamata), pitted and chopped

1 Tablespoon fresh parsley, minced

1 Tablespoon lemon juice

1/2 teaspoon GOLDEN BLOSSOM HONEY

4 slices rye bread, lightly toasted

4 ounces sharp cheddar cheese, grated

salt and pepper to taste

Gorgonzola and Caramelized Onion Sandwiches

Disclosure- I received the mentioned product courtesy of the sponsor for the purpose of this review. All opinions are genuine, based on my experience with the product, and have not been influenced by promotional items.

I've been on a cleaning frenzy this month trying to de-clutter my house and gear up for a yard sale next month. I'm years behind the Marie Kondo spark joy trend, but I'm finally embracing it and learning to let go of things that no longer serve me or make me happy. It's amazing how many things we hold on to with the hope that "someday" we might have a use for them again. Or a use for them at all. I dug out a picnic basket that I received for a blog promotion 6 years ago that I envisioned using summer after summer, yet there it sat untouched and still in its original wrappings. And it made me sad to think of all of the missed picnics over the years because I was in the rat race and forgot to slow down. This year one of my goals was just to actually slow down and live life a little. Go to the beach. Have picnics in the park. Just sit on the deck and admire the hummingbirds.... all things that I did before Covid turned the world upside down. I don't cook much these days, but I do still enjoy occasionally getting in the kitchen and whipping up a recipe that is sophisticated enough for a dinner party, but only requires the effort of a picnic basket meal. Like these Gorgonzola and Caramelized Onion Sandwiches from Golden Blossom Honey.

Gorgonzola isn't a cheese that I normally buy, but I thought it would be a seamless transition from the blue cheese that I usually keep on hand. I don't know if it comes in crumbled form at the grocers because I couldn't find it at mine, but I did think it was pretty easy to crumble myself. The creamy and bold cheese paired with caramelized onions, which I absolutely love, had me digging into not 1 sandwich slice, but 2! My husband enjoyed it as a lunch option but being a true meat eater, did suggest I put brisket on his portions the next time that I make this, which would be a full lunch or dinner option then. Either way, this recipe serves just as easily for a nice dinner at home or for a picnic in the park. Wrap it in foil to keep the cheese melty and you'll look like pinkies up at the park without the posh effort of a restaurant quality meal.

Ingredients

Caramelized Onion Relish

2 tablespoons olive oil

2 large onions, thinly sliced

3 tablespoons GOLDEN BLOSSOM HONEY

2 tablespoons balsamic vinegar

3 tablespoons golden raisins

salt and pepper to taste

1 loaf rustic country bread, sliced into 8 (1/2-inch thick) slices

1 (8 ounce) package Gorgonzola cheese, crumbled

Toasted Cheese, Turkey and Caramelized Apple Sandwiches

Disclosure- I received the mentioned product courtesy of the sponsor for the the purpose of this review. All opinions are genuine, based on my experience with the product, and have not been influenced by promotional items.

September, y'all. I barely remember what happened in August, it went by so quickly! Or maybe my brain was just fried from all that heat we had, idk. This is the month that I love and dread at the same time because it's the time of year that the fall festivals kick in and kick my butt at the same time. This weekend will be one of our busiest of the year so elaborate dinners, or even dinners that require much effort are out. While most of you in the States will probably be planning a weekend of cookout foods, we'll probably be doing quick and easy, like grilled cheese sandwiches and spaghetti. I did find this amazing sandwich recipe on Golden Blossom Honey for Toasted Cheese, Turkey and Caramelized Apple Sandwiches that I think I'll end up making for Jason tonight since he's taking the brunt of the workload today.

I've already started buying the first autumn apples of the season, so I have plenty to put to good use. I forgot how much I love caramelized apples, so today I will double or even triple the apple part of this recipe because in addition to a fun twist on a turkey sandwich, you can make it ahead of time and use it for a pancake or waffle topping or even to top your ice cream. Or you can be like me and just eat it straight out of the pan because why not? I would suggest using a panini press if you have one on hand because the apples can be slippery little suckers and a bit tricky to work with when flipping the sandwich, or you could toast the one piece of bread and cheese first, remove from pan, place the second slice down, pile on your toppings, then replace the toasted cheese bread on top, making this a no flip recipe. Whatever works for you, works for me!

Ingredients

8 slices rye bread

3 tablespoons butter, melted

4 slices sharp cheddar cheese

8 slices smoked turkey, from deli

1 cup baby arugula leaves

Apples:

3 tablespoons butter

3 Granny Smith apples, peeled and sliced

1 1/2 tablespoons lemon juice

3 tablespoons GOLDEN BLOSSOM HONEY

Open Faced Tomato Bacon and Blue Cheese Sandwich

Disclosure- I received the mentioned product courtesy of the sponsor for the the purpose of this review. All opinions are genuine, based on my experience with the product, and have not been influenced by promotional items.

This time of the year I would normally be turning to warm comfort foods, like stews, soup, or carb heavy casseroles since it's snowing and freezing in the Midwest right now. But, we've been in Florida for most of January and it's warm, breezy and beautiful here this time of the year so I've really had to adjust my eating habits this month. After spending a day sunning myself on the beach, the last thing I want to do is eat a hot bowl of soup for dinner. Or turn the oven on for that matter. So we've been eating a lot of sandwiches this month. One of the recipes I've made several times over is this Open Faced Tomato Bacon and Blue Cheese Sandwich from Golden Blossom Honey.

This is a light and easy meal idea, perfect for busy week night dinners or for a relaxed weekend lunch. It requires minimal prep and cook time, so you can get everyone fed quickly without complaint. You absolutely do not have to wait for warmer weather to hit before indulging in this sammy. If you're planning a game day menu for that big upcoming football game, you could switch out the bread and make sliders. If you want to swap out the bacon and make this vegetarian, avocado is a delicious replacement. You know how much I love versatile recipes, and this is one that you could make minor changes to each time you prepare it and it would feel like a whole new recipe every time. Try it as written or put your own little personal touch on your sandwich and I'm sure you'll be making this time and time again like we have recently.

Ingredients

8 (3/4 - 1-inch) slices French bread (not baguette)
4 slices bacon
2 tablespoons olive oil
1/4 cup shallots, finely chopped
4 tablespoons red wine vinegar
2 tablespoons GOLDEN BLOSSOM HONEY
salt and pepper to taste
3-4 large tomatoes cut into 1-inch thick slices
1/4 cup fresh basil leaves, slivered
1/4 cup blue cheese, crumbled

Sink Your Teeth Into A Monte Cristo Sandwich

Disclosure- I received the mentioned product courtesy of the sponsor for the the purpose of this review. All opinions are genuine, based on my experience with the product, and have not been influenced by promotional items.

I know I've been slacking on the blog posts this past month, but I decided to take February to knock off some much needed things on my to-do list that have been piling up. One of those things was making time to have lunch with a longtime girlfriend of mine. We go way back, all the way to middle school, but because adulting sucks, for the past few years we've only been able to keep in touch on Facebook. Our birthdays are a month apart, so when we hit that 40th milestone, I knew we had to get together to celebrate. As we caught up over margaritas, I found myself stealing glances at the sandwich on her plate- a scrumptious looking Monte Cristo. I've never had one myself, and honestly never attempted to make one at home because it just sounds like a fancy sandwich that would be complicated to make. But, she assured me it was actually really easy, she never follows a recipe, and her sons go nuts for them every time it's served for dinner. Unlike my friend, I usually need to have a recipe to follow when attempting something new in the kitchen, so I came home and immediately scoured Golden Blossom Honey to see if they had an easy to follow recipe for a Monte Cristo Sandwich, and sure enough they did!

Monte Cristo

Don't let the fancy sounding name fool you, because this was one of the easiest hot lunches I have ever tossed together for my family. While I don't eat lunch meat myself (gave it up years ago because of IBD issues), Jason and Allison raved about how tasty they were. Hosting a brunch any time soon? Pop this on the menu for an almost effortless main course. Be sure to make extra dipping sauce though, because it will go quick!

Ingredients

Mustard Dipping Sauce:

1/4 cup GOLDEN BLOSSOM HONEY MUSTARD
1 tablespoon orange juice

Sandwich:
2 eggs
1/2 cup milk
1/4 teaspoon salt
1/4 teaspoon pepper
4 slices lean deli ham
4 slices smoked turkey
4 slices Swiss cheese
8 slices white or wheat bread
2 tablespoons butter
powdered sugar for garnish, optional

Bakerly Offers Happiness In Every Bite

Disclosure- I received the mentioned product courtesy of the sponsor for the purpose of this review. All opinions are genuine, based on my experience with the product, and have not been influenced by promotional items.

I usually hit up two stores each week to fill my grocery needs. I'll hit up a mass merchandiser chain to grab a few select groceries, paper products, and any household items that we may need that week. Then, I like to head over to Fresh Thyme to stock up on their natural and organic goods and produce to finish off my shopping list. One thing that I love about shopping there is I always stumble across new finds which quickly become household favorites. A few months back I was browsing through the baked goods and found a little section of Bakerly breads and crêpes.

Bakerly

I kind of just glanced over the bread because Jason usually only eats whole wheat bread, but I did scoop up a package of the crêpes for the family to try later that day. There were several flavors to choose from, like strawberry, chocolate, and caramel, and I decided that we'd probably all like the caramel best so that's what got put in my basket.

Bakerly Crepes

These crêpes are made with an authentic French recipe. They are light and chewy and filled with gooey caramel and crunchy round cereal bits. They definitely offer happiness in every bite.

Bakerly Crepes

Needless to say, it was love at first bite for the entire family. We have since started buying the other flavors and think they are all equally delicious. You can eat them straight out of the package, but we like to pop them into the microwave for a few seconds to get the filling warm and gooey. It gives it a little extra boost of indulgence that way.

Bakerly did send me an assortment of their products to try recently, and I was excited to see that they included a loaf of their sliced brioche bread and a package of their brioche rolls since I still haven't tried them.

Bakerly Brioche Rolls

Bakerly Brioche Rolls

Like all of Bakerly's products, the rolls are made with an authentic French recipe. They are light and fluffy and yummy. I used them for dinner one night, filling them with cheese and sautéed veggies, and Mr. "I only eat wheat bread" gobbled them up without any complaints. If that isn't a winner, I don't know what is.

I've been using the brioche bread for lunch quite frequently lately.

Bakerly Brioche Bread

My favorite way to eat it is toasted on the griddle, then filled with Swiss cheese, sautéed mushrooms and caramelized onions. Mmmm. So good!

Yield: Serves 1

Caramelized Onion, Mushroom & Swiss Melt

INGREDIENTS:

  • 2 Slices Bakerly Brioche Bread
  • 1/2 medium onion
  • 8 ounces sliced bella mushrooms
  • 1 slice Swiss Cheese
  • oil for sautéing

INSTRUCTIONS:

  1. Peel and slice onion into thick strips.
  2. Over medium heat, heat oil of your choosing (I use coconut oil). Place sliced onions in pan and cook, stirring frequently for 20-30 minutes, until onions turn golden brown and get a caramel like coating. Remove from pan and set aside.
  3. Add about a tablespoon more oil to pan used for onions. Once heated, add sliced mushrooms and sautée over medium heat for 4 to 5 minutes.
  4. Layer onions and mushrooms over a slice of bread. Add the cheese and top with the second slice of bread. You can either toast the bread in a clean pan over medium heat or place in a 350 degree oven until bread is toasty and cheese is melted.
  5. Serve Immediately

What I love most about Bakerly is that their bread and snack items are line with my goal to eat as healthy as possible. Their products do not contain preservatives, hydrogenated oils, high fructose corn syrup, artificial flavors and they are GMO-free. So, not only can I snack a little healthier, I can feel good serving these products to my family too.

If you would like to learn more about all of the yummy products Bakerly carries, be sure to visit their website.
