August is coming in hot! The summer just flew by and now we're just 2 short weeks away from the kids all going back to school. It's time to get back into busy schedules and more structured days. With that comes meal planning to keep things on track, so having a steady list of delicious and nutritious meal ideas on hand is important to ensure the days run as smoothly as possible. When my girls were in school, I always liked finding good recipes that I could make the night before that would be simple enough to just reheat in the morning so we could get our day started on the right foot. Recipes like this Kale and Cheddar Bake from Golden Blossom Honey were what got me through those school day mornings with my sanity in tact.
This kale and cheddar bake is like a crustless quiche, making it a perfect breakfast option. It does require more than an hour bake time so I wouldn't recommend attempting to pull it off from start to finish on a busy school day morning. However, it can be made the night before. Just pull it out of the fridge and reheat while the kids are getting dressed and you have a quick, delicious, and nutritious meal ready to fill grumbling tummies and get everyone out of the house on time. Or, if you're like me with no more kids in school, this is a fantastic mid afternoon meal idea. Pair it with some fruit or a cup of soup for a filling lunch, or save it for a dinnertime side dish. It pairs nicely with most meat proteins, or make it a full meal on its own when you serve it with crusty bread, quinoa or wild rice, or roasted potatoes. Breakfast, lunch, or dinner, this recipe has you covered on those busy school days, and in my book, that's deserving of an A+ rating.
Ingredients
1 (10 ounce) package frozen chopped kale, thawed, undrained
1 (16 ounce) container cottage cheese
6 ounces cheddar cheese, crumbled
1/2 stick butter, melted
1 1/2 Tablespoons GOLDEN BLOSSOM HONEY
3 Tablespoons flour
2 large eggs, beaten
3 egg whites, beaten

DeleteWhat do you mean summer just flew by, the worst of summer has not even begun LOL August will be two weeks of straight 40C and 30C nights, no rain here and plus the start when that horrid allergenic weed ambrosia starts to bloom and the allergies begin. We are yet to survive all that. And on top of all that, today the city has again cut my block off from the downtown as they are making a new circular roundabout beneath the new bridge and we won't be able to approach the bridge nor the road for months, plus they cancelled our bus too just when the tropical hell on Earth begins. I am about to get a nervous breakdown LOL
ReplyDeleteI guess I should have said summer vacation. We tend to talk about summer coming to an end once the kids go back to school even though there's still more than a month left in the season.

Both, we have not had train for five years and now that we have it breaks down and jumps out of the rails every month, and we did not have bus for a whole year last year when they were building that damn bridge, and now it all starts again in the heat of the summer. All because our dictator is a vile cunt.
DeleteYeah, that might be rough to make while trying to get the kids ready in the morning. But the night before much easier. Still 5 weeks or so before the kiddos go back here.

DeleteI know a lot of people don't like Kale but I think it tastes like spinach when cooked. This looks good to me.

DeleteHow smart to make it the night before, for breakfast! How can I be a mom of 4 and have never thought to do that?! I've done it with dinner, 100%, but it never even crossed my mind to do it for breakfast. That would have been a game changer!! And of course, your recipe looks fantastic, per usual!

DeleteThis sounds delicious, but I can't say I've ever seen frozen kale? And I can't have spinach, so it kale would need to be found. I think my grandkids start back on the 19th. Boo!
