Holiday Fruit Tray

Disclosure: This is a sponsored post.

Tis' the season of overindulgence on sweets. Everyone seems to be in the kitchen whipping up goodies for gifting, holiday parties, or just because it's a fun thing to do this time of the year. It's so easy to over do it on the sugar intake without even realizing it. I always notice that the dessert table usually has as many offerings as the main course at Christmas, and I'm guilty of being one to contribute to the sweets pile with my chocolate chip cookies and buckeyes, which I spend my whole birthday on the 23rd baking. So in an effort to cut down on the sugary treats and maybe enjoy some free time on my birthday for once, I decided to skip the holiday baking this year. I know my family will probably not be pleased about that, but I plan on bringing something sweet to snack on with a healthier twist. This Holiday Fruit Tray recipe from Golden Blossom Honey is a great alternative to those sugary snacks that are in abundance at the holidays, and I think that it has so many yummy, sweet fruits piled on top, not a single person is going to miss a table with a little less dessert stacked on it.

Yes, I do realize that fruit and honey contain natural sugars, but it's a much healthier option over the processed sugars that you find in cakes and cookies. And while I've always had a sweet tooth myself, I have noticed over the years that if real, whole foods are offered, I tend to reach for those more than the unhealthy choices. While this holiday fruit tray is a breeze to toss together, it's a real time saver as well. If you're the parent of younger children, chances are you do the family gift exchanges on Christmas morning, then have to spend the afternoon making a side dish or dessert to take to the grandparent's house that evening, followed by getting everyone cleaned up and out the door on time. We had many years that we had 2 extra stops to make on Christmas day, and I remember being plain exhausted before nightfall. I am so glad those days are behind us now! I would have loved to have thought of something like this holiday fruit tray to save me time and sanity back then. Alas, this is my gift to you this year. The wisdom to say no to the extra baking, no to the extra unnecessary treats, and yes to more free time along with healthier offerings during the holidays. You're welcome.

Gingery Gingerbread with Orange Sauce

Disclosure: This is a sponsored post.

Have you started your holiday baking yet? I usually don't make too many holiday goodies until Christmas week. It's been exceptionally cold here these past few weeks, along with massive amounts of snow and ice getting dumped into our area, I haven't ventured outside much lately. When it's too nasty to be out of the house, I turn those into my baking days. I wanted to make some cookies this week and toyed with the idea of trying gingerbread again, but the last few times I made those cookies were massive failures. But I thought I'd check out Golden Blossom Honey's recipes to see if they had a fool-proof recipe for gingerbread cookies. While I didn't find what I was looking for then, I did spot this Gingery Gingerbread with Orange Sauce recipe that piqued my curiosity.

Honestly, after looking at the ingredients, I knew this was going to be a hit or miss recipe for me. I love me some gingerbread cookies, but ginger, even candied, is not something that I'd willingly eat on it's own. I really only use ginger in my stir-fry, and even then, sparingly. So, I was a bit nervous when this called for chopped crystalized ginger to go into the cake batter. I thought I'd be biting into chunks of it. But my fears were unfounded because after the cake was done, I realized that the crystalized ginger dissolves into the batter as it bakes and distributes the flavor subtly and evenly. The finished result was a moist, delicious gingerbread cake that rivaled the flavor of its cookie counterpart. Not overpowering, but enough to make you think you're eating the cookie in cake form. It's warm, sweet, and inviting. Such a fabulous dessert for the Christmas holiday. The orange sauce compliments the cake beautifully, and the final touch of the whipped cream ties all of the flavors together perfectly. I am so glad that I found and tried this recipe over the actual gingerbread cookies I had originally planned on making. This was way less messy and even more enjoyable to bake over the cookies, imo. You can garnish with some cute little gingerbread men. I found these holiday edition mini cookies from Pepperidge Farms at my local grocers that helped with the decoration of my cake. But those are optional. I just thought they'd make a fun addition to my desserts this season when I spotted them recently. If you're looking to do things a little different this year, I'd definitely recommend skipping the gingerbread cookies and making this Gingery Gingerbread cake instead.

Cranberry Oatmeal Cookies

Disclosure- I received the mentioned product courtesy of the sponsor for the purpose of this review. All opinions are genuine, based on my experience with the product, and have not been influenced by promotional items.

Now that Thanksgiving is behind us, we have officially entered cookie baking season. Last year was a rough one for me, and I remember sitting at the kitchen counter crying my eyes out because the thought of baking one holiday cookie just added more to my plate that was already overflowing. Cookie baking is something that I have always loved to do, and for as long as I can remember, I even spend my entire birthday on the 23rd making cookie boxes for friends and family. It's the gift that they all want and ask for every year, and the thought of letting everyone down weighed heavily on my heart. My husband ended up convincing me not to give up the beloved tradition, but suggested that maybe I cut down on the amount I normally bake and scrap the recipes that take a lot of time to make. At first I felt like Scrooge, but in the end I felt a sense of relief at still being able to scrape enough yummy cookies together to fill the boxes, and knowing that I still had some time left over to decompress and enjoy the holidays as well. This year I decided to keep that same energy and just stick with recipes that yield a lot of cookies per batch so I am not spending the majority of the Christmas season in the kitchen, but rather enjoying everything else fun that comes with the holidays. I nixed my sugar cookies because those always take the longest, and decided to replace them with Cranberry Oatmeal Cookies instead. This Golden Blossom Honey recipe seems like a Godsend, netting 3 dozen cookies per batch, so you can knock out a whole lot of space in those boxes without spending a whole lot of time in the kitchen.

What I love most about these cookies is that they have an air of being fancy, but the reality is that you should probably have all of the ingredients already on hand since they are all pantry staples. At least in our house they are. And this recipe proves that even with basic ingredients, you can still mix up one posh cookie, perfect for holiday gift giving without over the top or expensive ingredients. While I am a huge fan of the classic oatmeal raisin cookie, using dried cranberries in place of raisins just makes it that much more elegant and festive for the holiday season. Even if you aren't making cookies for other's this year, it's a delightful recipe to whip up for yourself. For my trial run batch, I paired mine with some berry flavored green tea, which made for the perfect Hallmark Christmas movie watching snack. Which now makes me wonder if these cookies are better to give or receive? The only logical solution would be to give a few away, but make sure you keep some for yourself because you deserve to treat yourself at the holidays, too!

Ingredients

3/4 cup shortening

3/4 cup sugar

1/2 cup GOLDEN BLOSSOM HONEY

1 egg

1 teaspoon grated orange zest

1 1/4 cups flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

2 cups quick cooking oats (not instant)

1 cup dried cranberries

1 cup walnuts chopped, optional

Frosting:

1 cup powdered confectioners sugar

1 tablespoon water

1 teaspoon orange juice

Wrap Up Some Caramel Nut Squares This Holiday

Disclosure- I received the mentioned product courtesy of the sponsor for the the purpose of this review. All opinions are genuine, based on my experience with the product, and have not been influenced by promotional items.

Have you wrapped up your holiday baking yet, or do you still have room for more sweet treats to whip up and pass out to loved ones? I love food gifts, both giving and receiving them, because who doesn't like to eat!? I don't have a lot of kitchen time this time of year (if you've been here awhile, you know that most of my family has birthdays the last two weeks of December, plus all those holiday obligations I have to deal with) so if a recipe hits my radar that looks delicious and easy, I am all over it. Like these Caramel Nut Squares I recently found on Golden Blossom Honey.

These caramel nut squares are a perfect holiday treat. They offer a cookie bottom topped with caramel and nuts, it's like a cookie/candy combo. What's better than that!? Nothing as far as I'm concerned. Bake up a batch, then have them on hand for your holiday guests, or if you are gifting treats this year, they go great with coffee or tea. Pop them in an oversized mug, tie up with some cellophane wrap, then place a festive bow on top. Or just toss them into your cookie boxes. With only being 1 inch in size, they are a great space filler.

Just a quick tip. Do not allow the bars to completely cool in the pan. Remove them while the pan is still slightly warm by running a butter knife around the edges then turning over onto a cutting board. I had to toss my batch back into the oven to remelt the caramel since mine was completely stuck to the pan after cooling, making them almost impossible to get out. Yes, I did use cook spray, but caramel sticks good, y'all. Or, just line your pan with parchment paper before adding the ingredients for easy removal.

Ingredients
Crust:
1 1/4 cups flour
2 tablespoons sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup cold butter, cut into small pieces
1 egg, slightly beaten
Topping:
3/4 cup pecans
1/2 cup whole almonds
1/3 cup pine nuts
1/3 cup GOLDEN BLOSSOM HONEY
1/3 cup light brown sugar, packed
1/8 teaspoon salt
3 tablespoons cold butter, cut into small pieces
1 tablespoon heavy cream

A Chicago Christmas

We make several trips to Chicago each year, but I have never once went there during the holidays. Something about being in the Windy City during the frigid winter months has never appealed to me. But, we haven't seen a lick of snow here all December so I was able to convince Jason to take us into the heart of the city earlier this month so we could take in all of holiday lights and decor.

Chicago

Chicago Christmas

Thanks to my yearly watching of Fred Claus, I think Vince Vaughn had me hoping there would be a Santa on every corner, carolers belting out Christmas classics, and the buzz of holiday cheer filling the air. While a few of the buildings around town were decorated with lights and decor, you have to make your way to Michigan Avenue to feel the holiday spirit. I'm a little bitter over the fact that there was no Santa on the sidewalks and I only heard one street musician, but there was plenty of holiday cheer to go around.

Chicago Christmas

We stumbled upon several oversized Christmas trees, and while they probably don't rival what you would find in New York, they were still very lovely to see.

I've always wanted to browse big city window displays at Christmas, and the ones on Michigan Ave. didn't disappoint.

The sidewalks were dressed to the holiday nines as well:

We also loved seeing some of the buildings lit up in holiday colors of red and green.

Water Tower Place Chicago

We didn't buy anything this trip since we decided spur of the moment to head over to Lincoln Park Zoo for the zoo lights (but that's a post for another day) and didn't want to have to carry our bags all over town, but I'm glad that after all of these years we finally got to experience a Chicago Christmas.

Glazed Crescent Cookies for Gifting or Keeping (all to yourself)

*Disclosure- I received the mentioned products courtesy of the sponsor for the purpose of this review. All opinions are genuine, based on my experience with the product, and have not been influenced by promotional items.

Who's doing some baking this weekend? This girl, right here! I plan on knocking half of my cookie recipients off my list this weekend, and will wrap up the remainder of the family next Saturday when the girls are free to help. Since I'm tired of making the same cookies year after year, I browsed Golden Blossom Honey for a little inspiration and came across these Glazed Crescent Cookies that I thought would be pretty and festive, but most importantly, something new for my cookie gift boxes this year.

Glazed Crescent Cookies

When I first came across this recipe, I was thinking it was going to be like those kieflies that tend to be really popular this time of year. Those cookies can time consuming, and since I'm looking for something new but without a lot of work, I almost kept scrolling. Thankfully, I did a quick run through on the ingredients, realized that these weren't going to take too much effort on my part (though they do require more than just scooping the dough with a cookie scoop and plopping it on a baking sheet), and decided I'd do a test run last week.

Glazed Crescent Cookies

I wasn't quite sure on how I was supposed to shape these, but after a quick YouTube search, I learned you should roll the dough into a log shape, then use the back of a rounded tablespoon along one side to gently press the dough into an arch. It really wasn't as complicated as my mind was trying to make it out to be.

Glazed Crescent Cookies

A tip on glazing the cookies. This glaze dries pretty quickly, so I would suggest glazing one cookie top, then sprinkling with nuts immediately afterwards. If you wait too long, the glaze will have dried and your nuts won't stick. You could even keep these nut free for those with allergies, and maybe just dip the ends in chocolate which would be just as delicious and pretty too!

Ingredients
1 cup butter or margarine
1 cup sugar
1 teaspoon grated orange rind
1/4 cup orange juice
2 Tablespoons cognac or orange juice
1 teaspoon vanilla
4 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda

Glaze:
2/3 cup sugar
1/3 cup GOLDEN BLOSSOM HONEY
1/2 cup water
1 cup blanched almonds, chopped

Drive Through the Shipshewana Lights of Joy This Holiday Season

Disclosure: I was provided free entrance to the Shipshewana Lights of Joy complimentary to help facilitate this post.

One of my favorite holiday pastimes has always been loading the family up in the car and driving around looking at the holiday lights. We have one area neighborhood that was always the hot spot to drive through during the holidays because it seemed like many of the residents went over the top on their displays. Sadly, the number of homes participating in the annual holiday displays there seems to have drastically dropped over the years, so unless we hear about a spectacular display or extra festive neighborhood, we've put the holiday light sightseeing on hold for the time being. However, it just so happens that I recently heard about the Shipshewana Lights of Joy Drive-Thru Experience and had the opportunity to indulge in one of my favorite holiday activities once again.

Shipshewana Lights of Joy

I'm about an hour away from Shipshewana, Indiana so I went back and forth on if I wanted to make the drive out to cover this event during this busy time of the year, but in the end my husband thought the kids in my family would be highly entertained by the displays, so off we went. Once we arrived in town, we were hit with many buildings dressed up in holiday lights and decor, and once we drove down the road a tad more, I felt like Garfield's John Arbuckle watching the family Christmas tree light up. It was a total "Ooooohhhhhhhh" moment coming up to the Lights of Joy.

Shipshewana Lights of Joy

Shipshewana Lights of Joy

Shipshewana's Lights of Joy is home to more than 2 million LED Christmas lights displayed in a mile long stretch, winding you through a joyous light experience that will have you "ooohhhing and aaahhhing the whole way through.

When you first pull up to the entrance gate, the attendant tells you to tune your radio to a local station that has holiday hits playing non-stop to make the experience more enjoyable. Because honestly, what fun is it to admire all of that twinkling goodness without bumping Christmas tunes along the way?

Shipshewana Lights of Joy

Shipshewana Lights of Joy

Shipshewana Lights of Joy

We went on a Friday evening and it wasn't crowded at all. There were only a handful of other cars out enjoying the displays, so we didn't feel rushed. I don't know if it is frowned upon, but I did get out of my car to admire a few of the displays up close for photos. The trails are one way and wide enough to fit two cars, so had anyone needed to pass us, it wouldn't have been an issue. While I loved the drive-thru aspect of this event, especially living in frigid Indiana where you may want to stay in your car, I think this could also be cool as a walk through, just to savor it a little longer. Maybe they'll offer that in the future?

Shipshewana Lights of Joy

Here's a little sampling of what you can expect of the views as you drive along the Lights of Joy.

We were able to complete the Lights of Joy in about 20 minutes, so if you are coming from out of town, I would highly recommend arriving earlier in the day. Shipshewana is such a charming city, celebrated for its Amish heritage. It's the 3rd largest Amish community in the United States, and you can find many of their beautiful hand-crafted wares in the locally owned businesses around town. It's also home to the Midwest's largest flea market where you can find some pretty fun and unique things to take back home with you. My husband is all about the family-owned businesses and suggests you check out Yoder's Meat & Cheese Co., Inc. Do keep in mind that most businesses are closed there on Sunday, but you can still walk around town enjoying the captivating Christmas displays.

Shipshewana Lights of Joy

The Shipshewana Lights of Joy is open to the public Thursday through Sunday, 6pm-9pm. Admission is $15 per vehicle Sun & Thurs and $20 per vehicle Friday and Saturday. You can visit the event now through December 30, 2018.

No-Bake Fruit Truffles

*Disclosure- I received the mentioned products courtesy of the sponsor for the purpose of this review. All opinions are genuine, based on my experience with the product, and have not been influenced by promotional items.

It seems like my oven is constantly on this time of year, so when I can find a delicious and festive recipe that doesn't require use of my oven, I am all over it. Some of the best goodies aren't even baked ones, like my mama's no-bake cookies (I have yet to find anyone who makes them as good as she does), or my white chocolate peanut butter balls (seriously, grab the recipe from my sidebar, you won't regret it!) You will always find an assortment of dried fruit in my house because it's great to add to cereals and oatmeal, so when I was browsing Golden Blossom Honey for some quick and easy holiday recipes to make this year, I knew I absolutely had to try these Fruit Truffles.

Fruit Truffles

These bite-sized balls may be small, but they are packed with a burst of fruity flavor. Not only are they no-bake, they are so easy to make that the kids can roll and coat them in cocoa and sugars while you work on other holiday recipes. I used dried cherries, cranberries, and currants in this recipe, but you can use pretty much any dried fruit in these that suit your fancy and I think they'll turn out delicious every time. They make a great addition to your cookie boxes, or put them in a small glass loaf pan wrapped with a ribbon for an inexpensive holiday gift for teachers, co-workers or neighbors.

Fruit Truffles

Ingredients
24 vanilla wafers
2 cups mixed dried fruit, (cranberries, cherries, apples) or Fruit Bits found in dried fruit section. You will need 2 (7 ounce) packages to get 2 cups.
1 tablespoon orange zest
4 tablespoons GOLDEN BLOSSOM HONEY
1/2 cup brown sugar
1 tablespoon orange juice
1 tablespoon butter
1 tablespoon vegetable oil
2 tablespoons confectioners' sugar

My New Holiday Helper: Mealthy HandBlend! #MealthyMoms

*Disclosure- I received the mentioned products courtesy of the sponsor for the purpose of this review. All opinions are genuine, based on my experience with the product, and have not been influenced by promotional items.

I know we all get excited about the gifts we are going to give and receive this holiday, but if you're like anyone in my family, you might be a little more excited about the holiday food. It doesn't matter what the occasion is, we always center our gatherings around delicious food and beverages, but even more so during the holidays. Some of our best conversations and belly laughs are always around the dining room table, so I look forward to seeing the assortment of home cooked goodies that will be in the family potluck that we'll be making new memories around each year.

Some of you may be experts at it, but I am new to the world of using an immersion blender. I know, weird since the majority of the posts here are recipe related. I recently acquired a Mealthy HandBlend and am now kicking myself for not adding one to my kitchen sooner.

Mealthy Handblend

The newest member to the Mealthy family, the HandBlend Immersion Blender is the quickest and easiest way to blend, puree, whisk, and chop effortlessly. The Mealthy HandBlend offers a complete immersion blending system that includes a high-quality stainless steel hand blender with sharp blades and is 100% BPA-free, whisk, chopper attachments, and a smoothie cup.

With the Mealthy HandBlend, you can blend soups and stews right in the pot for a smooth consistency every time without worrying about spilling hot soup by transferring it to a blender. Make whipped cream without having to pull out your heavy stand mixer, or whip up a breakfast smoothie without having to bust out the bulky countertop blender. And, because you can make your smoothie right into the smoothie cup, you don't have to worry about washing extra dishes. That makes it a winner in my book right there! There's a top rotary dial button that lets you choose what speed you need, and if you need extra power, there's a Turbo button that you can press for a boost of power and speed. Of, if you want to mix up some salsa for the big game, the extra-room chopper bowl with attachments will quickly have your onions, nuts, garlic, and leafy greens chopped and diced in no time.

I love to play with different appetizers, entrees and side dish recipes, but my specialty is dessert. I usually bring in one tried and true recipe that I know the family loves, but I will also throw in a new one to see if it's a keeper or a trasher. This year the winner was the chocolate truffle pie I made earlier in the fall (you can grab that recipe from my sidebar or in my recipes tab), but with how busy the season is right now, I'm looking to whip up recipes that say elegance but are easily made. We always break out the board games after a holiday meal, then settle in for a few hours of family fun. This is where dessert is usually served, and for Christmas you can't go wrong with eggnog. Eggnog Mousse to be precise.

Eggnog Mousse
Eggnog Mousse

I originally found this recipe in Taste of Home and it's been a holiday hit for the past few years. The creamy mousse can be served to the whole family, or add a splash of rum, brandy or bourbon before whipping for a more adult dessert.

Yield: Serves 4

Eggnog Mousse

INGREDIENTS:

  • 2 tsp unflavored gelatin
  • 2 cups eggnog
  • 2 tbsp sugar
  • 1/8 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/2 tsp pure vanilla extract

INSTRUCTIONS:

  1. Pour eggnog into a small sauce pan. Sprinkle gelatin over eggnog and let stand for 1 minute. Heat over low heat, stirring until gelatin is dissolved. Stir in the sugar, cinnamon and nutmeg until sugar has dissolved. Remove from heat and stir in vanilla.
  2. Transfer mixture into a small bowl, then refrigerate until firm. To make sure there aren't any lumps and mousse has a smooth consistency, give it a blast with your immersion blender, then return to the fridge and allow to firm again. Keep refrigerated until ready to serve. Before serving, garnish with whipped topping and a sprinkling of nutmeg if desired.

Recipe slightly adapted from Taste of Home
https://www.theresasmixednuts.com/2018/12/my-new-holiday-helper-mealthy-handblend.html

I like to top this with my homemade honey whipped cream.

Honey Whipped Cream

Simply chill the smoothie cup and immersion blender attachment that comes with the Mealthy HandBlend for 20 minutes. Pour in 1 cup cold heavy whipping cream, 2 tablespoons honey, and 1/2 tsp vanilla, then use the immersion blender in an up and down motion until stiff peaks form. You can also use the whisk attachment for a smoother cream, but I like the stiff cream I get from the immersion blender better because it's more stabilized for pies, cakes, and other dessert toppings.

Mealthy Handblend

Mealthy Handblend

For those who don't like eggnog, it's super simple to blend up a holiday milkshake instead. My go-to for the season is a Peppermint Patty Milkshake.

Peppermint Patty Milkshake

Normally I would hand chop the chocolate coated peppermint candies, but using the chopper bowl proved to be a much more convenient method. Within seconds, I had 3/4 cup of the candies chopped down to size.

Yield: Serves 4

Peppermint Patty Milkshake

Peppermint Patty Milkshake

INGREDIENTS:

  • 2 cups vanilla ice cream
  • 1/2 cup milk
  • 3/4 cup chopped Peppermint Patty candies (about 10 miniature candies)

INSTRUCTIONS:

  1. Unwrap the candies and place them in the Mealthy chopper bowl. Attach the handle to the top of the bowl and pulse the candies until they are pea sized.
  2. Pour the chopped candies, milk and ice cream into the Mealthy Smoothie Cup. Using the immersion blender, blend in an up/down on medium speed setting until the mixture is smooth and creamy (30 - 60 seconds).
  3. Serve in milkshake glasses rimmed with chocolate and crushed candy canes if desired. Serve immediately.
*pop in 1/3 cup Irish Cream Liquor to make an adult milkshake

You can see how using the Mealthy HandBlend is my new holiday helper, giving me that extra needed time saving boost to make elegant holiday recipes without a lot of effort. I've only scratched the surface on what this beauty can do, but stay tuned as I have more recipe ideas to coming over the next few weeks using an immersion blender. In the meantime, you can check out the Mealthy website for a plethora of recipes using the Mealthy HandBlend and other Mealthy appliances.
