I've never understood the obsession people have with worrying about what other people eat. I mean, what you put in your body has no affect on my life what-so-ever, so you'll never hear me make a comment on your dietary choices. Over the past year, I have found that when I tell people that I don't eat meat they think I'm nuts. How can that be? What do you eat then? Your life must suck. Come to dinner at your house? No, thanks. People assume that because I am a vegetarian that I simply don't know how to cook meat worthy of their standards, which is simply not true. I can throw down with the best cooks, and that is why my family usually asks me to host holiday gatherings. They know the food is going to rock. Even though I don't make a lot of meat dishes these days, when I make excess soup and have leftovers for the next day, I always make Jason a separate meal with a meaty main dish. Since I know he's been missing having pork chops lately, last week when I had my leftover soup for dinner I thought I would treat him to these Crunchy Pecan Pork Chops, a recipe that I found on Golden Blossom Honey.
I had accidentally bought a bag of pecans from Costco, not realizing that I already had a 5 pound bag at home. I've been looking for recipes to go through them all, and this pork chop recipe was a great way to reduce my stash. Plus, Jason got a rare meat dinner, so we would both call that a win. These Pecan Pork Chops are so perfect for fall, for you meat eaters I have a feeling this recipe is going to be in the favorites pile of your autumn recipe collection. Jason raved about them for days, so take that all you people who think a vegetarian doesn't know how to cook ;)
Ingredients
1/2 cup soy sauce1/4 cup lemon juice
1 Tablespoon GOLDEN BLOSSOM HONEY
3 Tablespoons onions, chopped
2 teaspoons horseradish
4 boneless center cut pork chops
1/4 cup pecans, finely chopped
1/4 cup white cornmeal
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
3 Tablespoons olive oil
