Some health complications landed me a stay in the hospital earlier this week. Thankfully all is okay now, but while I'm recovering, I've been instructed to stick with a low-fat diet until further notice. That didn't sound unreasonable until my sweet tooth caught wind of the limitations and realized we were putting the brakes on our late night ice cream and chocolate snacking. So that left me wondering what exactly I could exchange those unhealthy options for but still satisfy those sweet cravings I usually get as the day wears on. So I started flipping through all of the desserts on Golden Blossom Honey to see if anything would fit the bill and actually ended up with a fantastic option: Warm Bananas with Citrus Salsa.
This low-fat dessert is warm, inviting, and sweet enough to to curb the cravings on those desserts that are higher in fat. I do love a good caramelized dessert, and this one is definitely a keeper. Aside from peeling the fruit, there's hardly any prep time involved in getting the recipe together, which I really appreciate since I'd rather focus more on recovery these days than spending a lot of time in the kitchen. While we still have some chilly nights ahead of us this spring, this is the perfect cozy dessert to indulge in without guilt. Honestly, it's great for summer, fall, and winter too. Because we don't need the weather to dictate when we can enjoy a tasty treat like this, do we?
Ingredients
3 Tablespoons slivered almonds
3 tangerines
2 navel oranges
1 mango, peeled and cut into chunks
2 Tablespoons RAW GOLDEN BLOSSOM HONEY
3 Tablespoons brewed tea
1 Tablespoon lime juice
1/4 teaspoon pure vanilla extract
6 bananas, peeled and halved lengthwise
3 Tablespoons light brown sugar

DeleteHope you will recover soon, is there some food that you will have to avoid forever to avoid new stones? Bananas are my fave fruit.
ReplyDeleteNo he said that since I have a family history, it's just one of those things that happen and there's nothing I can do to avoid it. I do have to stay on low-fat until my liver counts come back to normal range though since the inflammation did a lot of damage there.
DeleteGoggle the natural remedies, there are natural herbal potions you can use to avoid stones, I think drinking lemon and olive oil in the morning helps, but I cannot remember it fully, goggle it, there is a natural remedy for almost everything, doctors just like to tie you up to themselves forever.

ReplyDeleteI always prided myself with never being a hospital patient but a strep throat that created an abscess landed me in the ER last year in October. It was a great ER and team but that bill 💵 but the pain of it was insane. Like a toothache, there was no escape or comfort
I got strep throat twice this year and desperately went to urgent care to get my antibiotics. At a certain point, only IV antibiotics work.
But I'm glad I was only in there for a few hours. My wife has been admitted many times and it has been mostly bad. I had to sleep on a cold floor once when there was no rooms. There was a chair but I literally can't sleep sitting up
The last time was like five days or something like that. Her mom eventually called it quits on watching the kids and I had to leave Jessica alone. Her mom is usually very helpful but that one irked me. I would never imagine myself doing the same to Alex especially if I was retired.
I hate hearing about your wife's health struggles, but I do hope she's in the all-clear now. Hospital stays are no fun for anyone, especially those who have to sit on the sidelines and hope their loved one recovers quickly. That's too bad about your mil. Sometimes young kids just wear out the older generation quickly. Hopefully that will be the last time she'll have to watch them for an extended period of time!
