Don't let the long ingredient list fool you. You should already have most of it on hand as they are kitchen staples. All I had to run out for was fresh Parmesan and Swiss chard leaves. With a good veggie chopper, you can make quick work of this recipe. From start to finish, you can have everything done in under an hour. This soup does have ham as an ingredient, which my daughter and I don't eat, but it was easy enough to sautee that separate from the onions then add it to my husband's bowl upon serving. Speaking of my husband, he's not usually a huge soup eater, but he did ask for seconds on this Italian Vegetable Soup, so I'd call this recipe quite a success upon that request. Additionally, even with his second helping, there is enough left over to reheat for dinner tonight. Two nights of healthy meals for 3 people that's not only delicious but budget friendly shoots this recipe straight to the top of my favorite winter soups. A great recipe find and the perfect way to start the New Year off right!
Ingredients
1/2 small green cabbage, rinsed and sliced
6 Swiss chard leaves, rinsed and sliced
1/4 cup cooked ham, minced
2 cloves garlic, minced
1/4 cup Italian parsley, chopped
1/2 cup onion, finely chopped
4 tablespoons olive oil
2 ribs celery, chopped
2 large carrots, chopped
2 large potatoes, peeled and chopped
2 small zucchini, diced
1 (28) ounce can Italian tomatoes, chopped, with their juice
1 tablespoon GOLDEN BLOSSOM HONEY
6 cups vegetable or beef broth
1 (19 ounce) can white cannellini beans, rinsed and drained
1/2 cup rice, uncooked
salt and pepper to taste
Parmesan cheese, freshly grated

ReplyDeleteSo you have had a lot of snow? We only saw a bit of morning dusting yesterday, but are supposed to have the country hit by snow for four days from the weekend, but I imagine our city will be the only one without it LOL
I have finished Lucinda Reileys last book LAST LOVE SONG for a review for my publisher, it was rather lovely, and will now go to some book about the theft of Mona Lisa which made it famous before the WW1. And I am translating a new book from the authoress of THE ANATOMY OF A SCANDAL book.
We had 2 mild winters and now Mother Nature is making up for it. We haven't gotten many dustings, but she'll dump 15 inches on us in an 8 hour period. This has happened 3 times already and I'm over it.

That soup looks so good. I have a recipe from my mother for Italian vegetable soup and it’s quite different from this one. Believe it or not, I don’t think I have ever eaten Swiss chard. I can eat soup anytime of the year, but there’s something about the month of January that has me eating it almost every day, even if it’s just a cup as a snack in the afternoon. I’ll be saving your recipe.
ReplyDeleteI've used Swiss Chard in soups before, but it's really not something I think of using off the top of my head unless a recipe calls for it. I also eat soup almost daily in January. It's so comforting on those chilly days!
DeleteAsking for seconds is a win indeed. Yeah, winter has been going up and down here too. I despise the cold, but no way I'd survive the Florida or Texas summer heat.

DeleteThe soup looks delightful. My husband made turkey soup on New Year's Day and it was delicious (he used leftover stock and turkey from Thanksgiving we had frozen and added fresh carrots, celery, and onion). And I don't even like turkey!

Oooh, Jane Austin is hit or miss for me. I know I've like a few of her books, but some I wanted to chuck out the window LOL
DeleteI love soup and especially soups with cabbage. No ham for me but I'm sure it will still taste good for this vegetarian without it.
ReplyDeleteFlorida and Texas are two of the states that do not have state income tax! That's always a big bonus. Our area is getting to congested now and it's not fun for me.
