I hope you all had a lovely and relaxing Christmas! We scaled back a lot on the gatherings this year and made it a point to keep the month of December as stress-free as possible. We didn't bake any cookies or host our traditional family breakfast. I bought most gifts online and opted for gift bags instead of wrapping paper. And, I didn't even put up a tree at home. After nearly 30 years of sticking with the same routine, I decided to shuck tradition for once and just exist in my own space. And it was glorious. But, the one thing I didn't skip out on was our annual Christmas Eve dinner. We spend every Christmas Eve with my mom and I am always tasked with bringing the main course meat for dinner. I usually make a prime rib or something similar, but keeping with the theme of simplicity this year, I opted to bake A Honey of a Pot Roast from Golden Blossom Honey instead.
I honestly chose this recipe because there were minimal ingredients and it looked pretty effortless as far as prep went, both of which were really important to me this year. Plus, even though there weren't many ingredients or steps in the recipe, it still sounded flavorful. I decided to toss some potatoes and carrots into the pan halfway through cooking to make this a true one pan meal. I was so impressed with the final result and how everything cooked to perfection with ease, I will more than likely stick with this roast for any other holiday dinners that I'm tasked with bringing the meat dish to. It will make a nice feast for New Year's, or thinking ahead, for a special Valentine's Day meal. Or, simply for a lazy Sunday dinner. It's great for holidays or for easy family days at home. I love a recipe that can swing both ways, between holidays or quiet family days, this roast works for all.
Ingredients
4 lbs. beef chuck roast or other suitable cut for pot roast
1/2 package onion soup mix
3 Tablespoons water or dry red wine
1/2 cup tomato juice
2 Tablespoons GOLDEN BLOSSOM HONEY
1 bay leaf

ReplyDeleteI had to force myself to put a few Santas on my coffee table as well, I haven't been feeling festive at all. I do not even feel the holiday atmosphere in the air given how unhappy we are here on the national level as the dictator is getting worse and worse and we no longer have any laws, constitution nor police as he has replaced all of that with criminals. I think his next step is to isolate us from the world fully.
I think we're all feeling grinchy with the political climate across the board. I'm sorry your dictator is still making life for you all unbearable. Maybe he'll kick the bucket this year and take our president with him.
DeleteMy son and his wife and 2 YO are currently here for a week (they live in Chicago as of last May). While we love seeing them, it’s been difficult to get things done. Everyone was here yesterday (kids/grands) and we make a big buffet and then we are hosting the cousin party on Saturday. It’s a lot. I’ll be happy when I have the house to myself again, can eat my regular food, and the decorations are packed away.

I get it. As much as I love having friends and family over, nothing ever gets done during their stays. It's like the whole routine just goes right out the window. But it is so nice that they live within reasonable driving distance that they can visit easily for the holidays.

DeleteMy first time in 55 years not having a tree and I missed it!! My daughter always gets a real one. She wasn't able to do anything this year (hunched over like an old lady from a swollen disc) so I took our tree out there. It spins and the kids like it, so I knew they'd be delighted. I set it up and left the decorations for them to do (shatter-free bulbs for the kiddos, of course). Then time and travel got away from me and I just didn't put one up. I missed it so much though!! Yesterday, I went out to get one on clearance (for next year) and a stupid Camaro crashed into me at the red light. But listen, it was very shortly after I said to someone, "I haven't been in an accident, knock on wood." Grrr. I jinxed it. Everyone's okay though, and that's the most important thing. Your pot roast looks lovely and I see you got your cranberry on the plate!! This is a recipe to keep in the files. Here to wish you a Happy New Year!
ReplyDeleteOMG Rosey, it sounds like bad luck all around! I hope your daughter is healing ok! And I hope your car didn't get too dinged up. Jason was in an accident in my car last week. Thankfully, no damage but it still stinks when that happens. Of course you jinxed it. That's the way the universe likes to play sometimes. But I am glad that everyone was ok in the end.
