October is the month that I have to start being really conscious of the foods I'm eating or serving to my family since the next 3 months are pretty much all about the treats, family meals, and holiday parties. It's easy to over-indulge in all of the goodies, then when January hits you wonder what the hell happened and why do your clothes no longer fit? My husband has already been complaining about all of the junk he's snacked on lately and he's feeling a bit sluggish these days, so I thought I'd offer up a few more lighter dinner options this week to help get him back on track. Our grocers had a nice sale on seafood recently, so I grabbed some salmon, mahi-mahi, and tuna steaks that I know my family enjoys. I was just going to sear the tuna for him and my daughter, but then I noticed that the last of the tomatoes that sprouted from my freebie plant this year had blushed and were ready for consumption, so I decided to be a little extra and made Golden Blossom Honey's recipe for Tuna with Tomato-Caper Sauce instead.
Ingredients
6 tablespoons olive oil, divided
1 1/2 cups onion, chopped
2 cloves garlic, minced
1 pound plum tomatoes, chopped
2 tablespoons fresh lemon juice
2 tablespoons GOLDEN BLOSSOM HONEY
2 tablespoons capers, rinsed and drained
pin ch of red pepper flakes
1 cup fresh basil, coarsely chopped
4 (6-ounce) tuna steaks, 1-inch thick

How delightful that the tomato came from your own garden. We have one as well, it sprouted in the middle of the yard from who knows where, not sure it will manage to ripen since it goes down to just 5C at night, it is already very cold, just 8C outside today even though it is 10AM. I thought I would wear hoodies well into October, but I had to take out my padded vest and winter coats in the last week of September already. The heating is on as well.
ReplyDeleteOh, wow! I can't believe it's cold enough for the heating there already. We've had a few chilly days and the nights are definitely getting to the point of needing an extra blanket on the bed. I did break out my thicker sweaters too, but have been a bit too hot on the days I've put them on so far. Jason's ready to head back to Florida now. He says the aches are starting in his body that only hit when the cold weather moves in.
DeleteWe still have a few cucumbers and tomatoes coming in, but we are suddenly getting green bell peppers and eggplants which is nice.
ReplyDeleteBell peppers are my favorite to grow because you have to try to mess those up. They are so easy to grow. I've never tried growing eggplant though, but something tells me I'd fail at those LOL

This is indeed a lightweight recipe, I'm also not a seafood eater, but this looks good.
ReplyDeleteIt does take some planning to stay on track with healthier eating. This recipe looks delicious and it's good you are being proactive with all the upcoming holidays often starting with Halloween candy and going through till New Years! The sauce sounds interesting with the contrast of salty capers and sweet honey.

ReplyDeleteHow did I fall so far behind??? Tuna is a great dish to serve when my oldest granddaughter is in town. She loves salmon better but tuna is a close second.
