Paella-Style Baked Rice with Sausage and Shrimp

My dishwasher was on the fritz this week, which was totally not cool since we just replaced our fridge a few months ago. Thankfully I was able to order the part and fix it myself, but since Amazon took their sweet time getting it to me, I had a period of 3 days where I had to hand wash everything. I know, what a thing to complain about with all of the other real issues in the world, but my plate is already overflowing and I didn't need extra tasks this week. I relied heavily on recipes that didn't add to the piles in the sink. If I could get a twofer, like chili that we could eat 2 nights in a row, or one-pan meals, I was all on it. My daughter has been talking about wanting paella recently and I remembered I had saved a one-pan paella recipe from Golden Blossom Honey recently (Paella-Style Baked Rice with Sausage and Shrimp), so there was no better time to give it a whirl.  
 

As far as one-pan meals go, this one is tip top! Super easy and super delish, and with my family, there is something for everyone in the ingredient list. While Allison and I skip the sausage, which is easy enough to pick out, it's my husband's favorite part of the dish. For us girls though, the shrimp and chickpeas are where the party is at. My daughter actually thought she never liked chickpeas, but after trying this was like "I guess I do like them after all!" Our palates are ever changing, so it goes to show that there's always room to explore new and old foods alike. And even if your dishwasher isn't on the fritz, we could all use a little time saving in the kitchen, so having one-pan meals such as this one to lean on is always a good idea. 
 

Ingredients

2 tablespoons olive oil, separated

1 pound Italian sausage links, hot or mild according to your preference

2 cloves garlic, finely chopped

1 pound plum tomatoes, chopped

2 tablespoons GOLDEN BLOSSOM HONEY

1/2 pound shrimp, peeled and de veined

1 (15 ounce) can chickpeas (garbanzo beans), rinsed and drained

2 teaspoons paprika

1 cup medium or long grain rice (not instant)

salt and pepper to taste

3 cups hot chicken broth

  1. Our old Yugoslav fridges used to work for 50 or more years without being turned off and without breaking. Hope you bought a big lovely one. We have never had a dishwasher nor laundry drier here. I don't even have a rumba, but would love to LOL
    Mother bought some ugly new carpet for the hall downstairs recently and I have to buy me new sneakers but cannot find anything pretty in any of the shops.

    1. Oh, I'd love a Roomba too! I hate doing the floors most in my house. Maybe you'll find some nice sneakers when the next season's collection hits the stores, if you can wait that long.

  4. I just use one plate, so after done, wash it and put it back. Easy peasy lol

    Palettes ever changing though? Ummm am I the exception to the rule?

  5. I stand in awe that you fixed the dishwasher yourself! Yes, one-pan wonders are ideal at many different times, but never so much as when we are busy. Great pics, they look better than a lot of professional pics!

    1. I'm in awe of myself too LOL. My go-to is usually making Jason take a crack at things, but he's not home often these days, so I figured I'd try my hand at it. Color me surprised when I was able to diagnose and fix it all by myself!

  7. Oh my gosh, a broken dishwasher is the worst. I totally get not wanting to have extra dishes to do. This recipe looks so amazing, and I love that it's a one-pan meal. It's so smart to find easy ways to eat well when you're super busy. It's so sweet that your daughter discovered she likes chickpeas! It's so true how our taste buds change over time. Thanks for the recipe.
